For our last pick of the vintage, we collected fruits in impeccable condition from a slow maturing Sauvignon vine. Wild yeasts fermented and aged in a seasoned Francois hogshead as well as in tank, the wine is cool, perfumed with citrus, star anise and warm grass scents. Delicately balanced, with a hydrating feel, it is a very soothing White Smoke.
