Sauvignon is a more versatile and playful cépage one imagines. From a small batch in great condition, while showing uneven ripening, we slowly basket pressed a rich juice into a fresh Stockinger barrel. Wild yeast worked at glacial pace for 14 months, eventually preserving 8 gr of residual sugar. The result is a unique Sauvignon displaying a balance reminiscent of the famed Vouvray and Montlouis Chenin, with an extra herbaceous freshness.
